Friday 30th July 2010

On the last day of our show today we looked for some "Feel Good" stories from our listeners.  Ken called to tell us how happy he was at the news his little baby boy, born 7 weeks prematurely, will be home tomorrow and he can't wait..... while Marian called to say she's ecstatic to be free for weekend.... She's on her way to Edinburgh with 20 other friends for a Hen Night.... her first time to go on the raz in a long time...

 

What unusual/exotic type foods have you eaten.... Dessie told us about eating sheep's brains in a Lebanese restaurant in the U.K.....Lucia told us all about eating fish eyes with chop-sticks and Bernie regaled us with memories from the 1950's when she and her family ate sheeps head and vegetables in a soup - it did them for the week.

 

We caught up with Paul Glavin & Co who are heading to Mongolia in a Fiesta - they're travelling through Transylvania and are hoping to make it to the Black Sea by this evening....

 

 

Thursday 29th July 2010

On today's show we asked the question "How tight are you" or do you know of anyone who's really mean.  We heard from Mickey, who when he was a student, lived with a guy who used to clean his ears with cotton buds, and leave the bud to dry for use at another time..... Sharon told us about her boss in a restaurant in Greece who used to fill plastic bottles of water with tap water and pass it off as mineral water....

 

On the subject of being overweight, we put out the call as to whether over-weight people would have a problem with being called "Fat", or would they prefer to be called obese....

 

Neville Knott joined us in studio with some helpful advice on interior design.

 

We also took a call with Mario Borza who runs Silvio's chipper in Templeogue.  He's just opened up a new place called Silvio's Sports Diner in Tallaght and  it's the official restaurant for the Shamrock Rover's Team and Mario has been appointed their official Translator....

 

We were also joined in studio by Hilda Fay who plays Tracy in Fair City.

On today's show we asked the question "Can you remain friends with your Ex?" - we heard from lots of callers who have managed to remain friends despite having separated, divorced, and from children of divorcees who said things actually got better when the parents split.....

 

We heard from an anxious caller whose kitchen has been taken over by ants - she was looking for advice/hints on how to get rid of them and we had suggestions ranging from Cinnamon sticks to Bleach.....

 

Our money doctor John Lowe came in to impart more advice about managing money, mortgages and investments....

 

And we were serenaded in studio by Declan O'Rourke, who played a couple of his songs for us.....

On today's show we heard from Lorraine who back in 1967 queued up for 14 hours for tickets to see the Beach Boys at the Adelphi.  We also heard from a dedicated mum who queued for 5 days and nights to get her son a place in secondary school.

 

Daithi O'Se and Paddy Power reported from the Galway races and gave us their tips.

 

Our regular Health and Nutrition expert Paula Mee gave us the low down on 10 foods that you think are bad for you, but are actually good for you.... They are 1. Avocado, 2. Spaghetti & Meatballs, 3. Bananas, 4, Peanut Butter, 5. Coffee, 6. Sweet Corn, 7. Burritos, 8. Chicken Thighs, 9. Potatoes and 10. Eggs.

Monday 26th July 2010

 

First up on the Show today we heard from Paul Glavin calling from South Germany.  Paul is driving his 9 year old Ford Fiesta to Mongolia in a Rally, along with about 300 other competitors.  It's all about driving an unsuitable car, under 1200c.c. across such terrain.  The rally started outside Portsmouth and went to Milan and Barcelona.  You can read more about it on www.rebel-warriors.com

We heard about listeners unusual phobias.  One caller told us about her fear of balloons, while another caller, Aileen, recounted her detestation of sello-tape.  Tom has a phobia about tomatoes, and has to take them out of his Spaghetti Bolognese, yet he loves tomato ketchup!!!! And Teresa hates people breathing on her.....

Scientist Niamh Shaw was in studio talking about the aging process and imparted some hints as to how we can delay / defy the aging process....

Duckworth Lewis (Neil Hannon and Thomas Walsh) provided a musical interlude from Studio 8.

SELF AID

Do you remember Self Aid way back in 1986 - the concert where the great and the good gathered to pledge jobs for Ireland's unemployed?  Journalist Dave Kenny chatted to Colm about his Self Aid memories.

 

Comedian Karl Spain is featuring in 'Life with Diabetes' on RTE One on the 3rd August. Karl explained living with diabetes [Type 2] means taking two tablets a day and keeping an eye on what you eat. Karl has taken up more home cooking and he attempts to create more diabetes-friendly foods including recipes from Operation Transformation.

 

BINGE DRINKING
Michael does not drink and he won't even have porter cake anything with the taste of alcohol.  Charlain is 34 and does not drink and she never feels she's missing out when she is out socialising with her pals.

 

SMALL SHOE SIZES

June takes size 2 in shoes and her son is getting married next Thursday. She is finding it very hard to get a suitable pair of high heels to match her outfit. David from Shoetown, Bridgefoot Street, Dublin 8  sells  ladies shoes from size 2 to 41 and he maybe albe to come to June's rescue.

BREAK-IN

Josephine's house was broken into at 8.30 in the morning while she was in the shower... so she was completely vulnerable they locked her dogs in  the sitting room. The burglars took her purse, car keys and anything else that was valuable. They got to the gates and they could not get out so they jumped out of the car and left everything behind...

 

Colm's mum had a sword in her house.. She got burgled recently and the robber threatened her with the sword! He thinks it is not always a good idea to have weapons in the house!

 

MEMORABILIA

 

Tom has a colour photo of Muhammad Ali and it's signed by Ken Norton. The picture was taken on the 10th Septemer 1973 . He paid $180 for it a number of years ago when he was on a cruise. He wanted to know would it be worth a few euro today?

 

 

Tuesday 20th July

On today's show

 

Chef Kevin Dundon and 2fm Allotment Project Manager joined Colm and Lucy this morning for our first harvest and cookery demonstration.  Kevin preparied the following recipes:

  • Minted Pea Soup
  • Marinated Fennel with Pan Seared Cod
  • Summer Herb Salmon
  • Roasted Beetroot Salad

 

Summer Herb Salmon (Serves 6)

Salmon is very high in protein and omega 3 acids as well as Vitamin D. This recipe works very well with sea bass, turbot, and prawns or scallops either. Use a selection or combination of herbs in this dish.


6 fillets salmon (approx 6oz/175g per person)
4 tablespoons mixed fresh herbs:
-parsley
-coriander
-lemon thyme
-fresh sage
-chives
-mint
-dill
-fennel
1 tablespoon capers
Juice of 1 lime
Zest of 1 lime
6floz/175ml oil
1 bunch chopped spring onions
3 cloves garlic

In a large bowl mix together the chopped fresh herbs, with the spring onions and the chopped garlic. Add in the capers, lime juice and zest and mix well.
Pour in the oil, whisking well and then add in a little salt and pepper
If you wish you ca remove the skin from the salmon but I normally leave it on.
At this stage pop the salmon into the marinade and leave to marinade for at least 1 hour.
As this marinade is not full of strong and excessive flavours it is fine to leave it marinade overnight.

• Put the marinated salmon on the barbecue and cook for approximately 5 minutes on each side. Do not leave it on a part of the barbecue which is too hot or severe and likewise when it is on the barbecue aim to turn it only once so as not to break up the fish.
OR
• Heat a large frying pan with a tiny amount of oil and cook the salmon flesh side down for 4-5 minutes on a medium heat and then turn it over onto the other side and repeat the process. The salmon should feel quite firm when sufficiently cooked. If the piece of salmon is very thick you can finish cooking it in the oven.

Serve the salmon with some salad leaves or it can be quite nice served with some boiled rice or baked potatoes.


Salad of Baked Goat's Cheese, Beetroot, Orange and Walnuts (Serves 4)
 
This is one of my favourite salads and Catherine and I often have this if the girls are at a sleepover or something because they are not too keen on the beetroot. Each ingredient in this salad has its own unique flavour but they marry together extremely well. The sweetness of the orange works particularly well with the strong and sometimes salty taste of the cheese.


350g /12oz young goat's cheese
200g/ 7oz young baby beetroot
3 large ripe oranges (segmented)
3oz/ 75g/ ¾ cup walnuts
2 tablespoons of walnut oil
2 tablespoons of balsamic vinegar
Juice of ½ orange
200g/7oz fresh rocket leaves (or any type of salad leaves)

Preheat oven to 190C/375F/Gas Mark 5
Cut the goats cheese into large chunks.
Cut the beetroot into large wedges and put them on a roasting tray with a drizzle of olive oil and some salt and pepper.
Transfer them to the oven and roast for 20-25 minutes until they are just tender.
Meanwhile and on a separate tray lined with parchment put the chunks of goat's cheese in the oven for 5-6 minutes-just beginning to melt.

Make up the dressing by mixing together the walnut oil and the balsamic vinegar and store until required. Add the orange juice to this dressing also.

Arrange the rocket in your serving bowls.
Divide the orange segments between the bowls. Scatter in the warm beetroot and the baked goat's cheese. Toss in the walnuts at the end and drizzle generously with the nutty dressing.

 

Minted Pea Soup


A small portion of this soup will be enough but it is delicious to begin a dinner party.
Sometimes I use wild garlic or even smoked bacon instead of the mint to flavour the soup instead. If you do not have access to it you could add some basil or chives or flat leaf parsley to the soup either.

1oz/25g butter
1 large onion-chopped
1 medium sized potato-chopped
2 cloves of garlic chopped
1lb/450g fresh/frozen peas
1 ¼ pint/700ml chicken stock
4floz/110ml pouring cream
Seasoning
2 tablespoons chopped mint

Add the butter to the pot and sauté the chopped onions, garlic and potato until lightly browned.
Add in the peas to the pot and mix those around for a moment of two until they are lightly glazed with the butter mixture.
Add in a pinch of salt and a crack of black pepper at this stage.

Next pour in the chicken stock and the pouring cream and bring the mixture to a rapid boil.  Reduce the heat and simmer for 10-12 minutes until the peas have softened, yet still retain their green colour.
Add in the fresh mint at this stage and mix well.
Transfer to a food processor and blitz in batches until the soup is smooth.
Return the mixture to a clean saucepan, correct the season and reheat gently.
Garnish with a little natural yoghurt mixed with mint.

 

Marinated Fennel with Pan Seared Cod

Fennel is a really good robust flavouring to add to any dish but it works particularly well with fish. I often add a little diced fennel into seafood chowder to give it a good earthy feel.

Marinated Fennel:
1 bulb fennel
Grated zest juice of 1 lemon
3floz/olive oil

Using a mandolin thinly slice the fennel and place in a large bowl
Add in the grated zest and juice of 1 lemon and then pour the olive oil in on top of it.
Season lightly with a little salt and pepper and then cover down and leave in the fridge to marinade for a couple of hours-preferably overnight.

Pan Seared Cod:
4 fillets of cod (150g each)
1oz/25g butter
Seasoning

Select a large pan and heat with a the butter content (25g)
Add a little salt and pepper to the fish.
Pan Fry flesh side down- on a hot pan until fish sealed on either side (this should take about 3-4 minutes on either side)

Serve the cod on top of the marinated fennel salad.

 

BREAK-IN'S
Mark has three samurai swords displayed in his bedroom window as a deterrent. And he could tell you if anyone dared to come into his house. It will be off with there head. No problem. He has worked hard for everything he has.  He has four gorgeous children to look after.

CHILDREN'S ALLOWANCE

Pauline is a nurse and her husband has recently taken a pay cut. She works very hard and pays almost half her wages on tax. Pauline relies on the children's allowance especially this   time of year with back to school etc.

Liz told Colm and Lucy why she thinks the children's allowance should be means tested..

Zingy, zesty white from the Cape that smells of blackcurrant leaves and green gooseberries. Astonishing value for money. The ideal match is fresh goat's cheese.

Oz red that does NOT taste of alcoholic fruit juice. Coolish climate fruit, smoky nose, plums, licquorice, complex. At this price?!! Wow! Needs grilled meat. Perfect for steak.

WINE AND FOOD

CURRY: don't bother with wine unless it's very mild and creamy, in which case an Oz red with a spicy character will work well (e.g. Howcroft Shiraz at 6,99 from Tesco). If it's hot, stick with beer.

THAI FLAVOURS: If it's really hot it will kill wines stone dead. If medium, the lime and ginger will go well with a Riesling (two examples already cited)

SPAGHETTI BOLOGNESE is trickier than you might imagine. A really good match is: Tesco Finest Barbera d'Asti (red) Tesco 7.35

TRACEY'S STORY WAS OF HERSELF AND HER HUSBAND ELOPED TO NEW YORK, DIDN'T  TELL ANYONE THEY DIDN'T EVEN BRING HER DAUGHTER AND JUST HAPPENED TO HAVE 2 FRIENDS WHO THEY ASKED THE NIGHT BEFORE THEY GOT MARRIED TO BE WITNESSES!

 

TANYA WENT TO THE REGISTRY OFFICE IN KILKENNY AND GOT MARRIED WITH JUST A FEW PEOPLE. WE HAD ORGANISED A NIGHT OF GREYHOUND RACING IN NEWBRIDGE THAT DAY AND AT THE END OF THE NIGHT WE TOLD THEM WE HAD GOT MARRIED THAT DAY. THERE WERE A FEW SHOCKED FACES...

 

 

 

HOLIDAYING AT HOME 
EOIN WENT TO KILLARNEY TWICE. EACH TIME WE WENT TO THE SAME HOTEL. THE FIRST TIME WHILE THEY WERE GONE THEIR FARM YARD WENT ON FIRE. THE SECOND TIME SOMEBODY CRASHED INTO THEM AND WROTE OFF THE CAR 2 MILES OUTSIDE KILLARNEY. A LONG WAY AWAY FROM OUR HOME IN WEXFORD.

DRAMA SOCIETIES

Michelle use to be in Dundalk Musical Society for the pantomimes when she was little. The cast members used to play tricks during the matinee on a Sunday. She can recall one Sunday during Snow White they replaced the "clothes" she had to hang on the line while singing a song with lingerie... Poor Snow White had to just keep going

 

 

CHILD MODELLING


Keith's daughter aged two took part in a maternity and infant shoot in July/August last year. It was just advertising clothes for children ...  He is happy to have the magazine and he is looking forward to keep it as keepsake for his daughter.

Tanya has a little 6 month old baby son and people are always saying to her to put her child into child talent agencies. On one of the sites she was on you could look at the kids they had to hire. It made her feel kind of sick to see these little babies being put on a web site for hire. These babies have no idea that their parents have put them in this position and to see them with their smiling innocent faces is really disturbing. All a baby wants is to be loved and fed and to be happy.

 

 

 

DUTCH DISHES

 

Jeanette Vandecolk is from Holland and she is married to an Irish man. She told Colm and Lucy about her favourite mixed dishes, veggies with spuds and sausages.

Fergus discussed the male menopause ... not women o pause. It's been a male issue since day one.  Men have as many hormones as women.   Fergus is 32 and he has seen some men in their 50s buying sport's cars - there has to be something in this male menopause.

 

Karen is looking for marigold gloves or novelty gloves for her little girl who would love to help us with the dishes....She was looking on the internet but couldn't seem to find anything...

 

John Brennan chatted about the highs and the lows of the World Cup so far .. And John gave a quick preview and post match analysis of the two World Cup Semi Finals...
